I wish I knew who created and mastered this recipe, I would applaud them because ever since Alexander’s mom gave me the recipe it has been a staple in our home for every holiday, birthday, little celebration, dinner party & random Sunday afternoon treat.
It’s too good not to share. And I swear, it’s quick n’ easy. It can easily be made dairy-free and gluten-free, I personally substitute a few ingredients (I noted which ones).

What you will need:
1 ½ cup organic flour
⅓ cup organic, raw cacao (not cocoa)
1 tsp baking soda
½ tsp salt
1 cup organic sugar (I always use coconut sugar)
½ cup avocado oil
1 cup cold water or cold coffee
2 tsp vanilla extract
2 Tbsp vinegar
Directions:
Preheat oven to 375 degrees
- Sift flour, cacao, baking soda, salt and sugar in an ungreased 8” square or 9” round baking pan.
- In a 2 cup measuring cup, mix together oil, water (or coffee) and vanilla. Pour the liquid ingredients into the baking pan. Mix the batter with a fork or small whisk.
- When the batter is smooth, add vinegar and stir quickly – there will be swirls in the batter because of the baking soda and vinegar reacting together, it’s normal, so just continue to stir until evenly distributed.
- Bake for 25-30 minutes.
