Typically when I think of mocha I’m transported into a cozy room snuggled under a blanket with a fire blazing and a hot mug of mocha-something in my hands, the chocolatey smell wafting to my nose as I slowly sip it from a Christmas mug.
This latte recipe is nothing at all like that, and mocha is not a flavor I usually prefer outside of the months of December through February. But a latte made with chocolatey collagen powder, a big splash of maple syrup, and poured over ice…I truly can’t get enough of!
It’s an easy at-home recipe, all you need is 1-2 shots espresso, maple syrup, chocolate collagen powder or cacao powder and your choice of milk.

Two Ways to Make Espresso
When it comes to espresso, my husband and I have a few favorite ways to make it – either from a moka pot or an espresso machine. A moka pot is a stovetop coffee maker that makes coffee by pressurized steam. They come in all sizes and are perfect for a small yet strong cup of coffee or, as we like to do, use it as espresso. The moka pot was created by an Italian engineer, and since we’ve both been influenced by Italian culture, it makes sense why we love the strong, rich taste. My first time using a moka pot was in a quaint stone apartment in Italy when I first stepped foot in the beautiful Tuscan country-side with a few friends. It’s a distinct memory and using a moka pot brings me back to that trip and especially the slowness of European culture.
The second way we enjoy making espresso is from a basic espresso maker (here’s the one we bought and use every day). It’s much quicker than our Italian moka pot but to hear the beans grind and smell the freshly ground coffee perks us up! Both ways we make espresso makes a delectable drink feel more simple yet handcraft.

How to Make an Iced Mocha Latte
To make, simply pour 1-2 shots (1-2 oz) of espresso over maple syrup and the Chocolate Collagen Powder, stir it well until combined. Add a few ice cubes to the mixture and top it off with as much milk as you’d like!
Our kids love “lattes” too! Most mornings we’ve been frothing milk and adding a little scoop of the Chocolate Collagen Powder* and maple syrup for them to sip on too.
