What You Will Need

Large mixing bowl

Whisk or wooden spoon

Laddel

2 pans (cast iron or stainless)

Spatula

Ingredients for Pancakes

1 cup sourdough discard

1 cup flour

1/2 cup milk

2 large eggs

1/4 cup avocado or coconut oil

2 Tbsp honey

1/2 tsp salt

1 tsp baking soda

Toppings

Whipped cream (I often make homemade whip)

Berries (strawberries, blueberries or raspberries work best)

Banana slices

Chocolate chips

Bacon (2 slices per reindeer)

How to Make

My best tip would be to cook the bacon first or make the batter while the bacon is in the oven. For the pancakes, add all the ingredients (except baking soda) in a large mixing bowl, mix well to combine. Add the baking soda, mix to combine, cover with a tea towel, let sit for 5 minutes or up to 1 hour. The batter should be bubbly and fluffy!

Heat the pans and once they are hot, put a little butter or oil on each pan, let it get warm.

For 1 reindeer, you will need 2 small pancakes, 1 medium and 1 large pancake. On the first pan, ladle 2 small spoonfuls of pancake batter onto pans. These will be for the ears. Then ladle 1 medium sized spoonful to the same pan or second pan, and finally ladle 1 big spoonful to make a big pancake for the head. Let each pancake sit on the pan until they bubble before flipping, 2-5 minutes.

Flip to the second side and let cook another 1-2 minutes.

To assemble reindeer, place large pancake down first, lay medium pancake on top of the large pancake, and place both small pancakes at the top of the large one for the ears. Next place the bacon at the top of the ears for the antlers and place other toppings on reindeer as you want – I usually put little dollops of whipped cream down and use chocolate chips as eyes, a red berry as the nose and give the reindeer a collar of other berries.

Serve with warm maple syrup, enjoy!
